I made this and it has an interesting flavor… not too bad though
The pineapple in this sweet smoothie contains the enzyme bromelain, which has been proven to ease digestion and support a flat belly. This recipe makes 1 serving.
- 2 dl fresh pineapple, diced
- 4 tablespoons light coconut milk
- ½ small banana
- 4 tablespoons crushed ice
- ¼ teaspoon minced lemongrass
- 1 teaspoon unsweetened coconut flakes
Combine all ingredients except the coconut flakes in a blender container and puree until smooth.
Top off with coconut flakes, and enjoy!
Recipes I’ve tired: things that are awesome for lunch edition. Now that it’s summer (have I mentioned that lately?), I’ve got time to make myself a proper lunch most days. Though leftovers will always be my favorite lunch because I am incredibly lazy, but here are some other recipes that I’ve been diggin’ lately.
Curried Chickpea Salad. Curry powder is magic, right? So are chickpeas. And greek yogurt. This whole thing? Magic.
Eggplant Panini. The recipe calls for pesto to spread on the sandwiches (and it’s excellent!), but I usually just go with marinara. Goat cheese is also a great sub for mozzarella — I actually prefer it. I use my George Foreman grill as a stand-in for the panini press I do not own, and it always works fantastically.
White Bean, Kale & Tomato Quesadilla. I use those wheat low-carb tortillas for these babies to make them even lighter. The white beans add a nice creaminess so that you can use less cheese. And kale is super trendy, so you can totally instagram these.
Avocado Chicken Salad. This is basically guacamole chicken salad, and I love that about it. It’s good on its own, or over some steamed veggies, or on toast, or on crackers. It’s a winner.
